I tried making a zero waste cake

  • Ok so I guess zero waste baking was made a little bit easier by the zero waste shop. I know there is probably going to be an army of zero wasters who will tell me I have done something wrong, but I did my best!
    Lemme know if you have any good zero waste recipes?!
    My recipes (which I don't reccommend at all because I just freestyled them and haven't played around to get the perfect recipe yet)
    1 avocado
    100g sugar
    1 egg and 1 egg yolk (you can use the egg whites to make meringues!)
    110g cocoa powder
    60g Almonds
    1/2 Teaspoon Baking powder
    40g Oat flour
    mash your avo add the sugar. Then add your eggs. Sieve cocoa powder and baking powder, and mix in the rest of the ings. Bake in fan oven at 160 for 11 mins (or until baked to your preference.
    1 Orange boiled for 2 hours
    3 eggs
    125g Ground Almonds
    125g Caster Sugar
    2 tablespoons Water
    25g Cocoa Powder
    1 teaspoon Baking Powder
    Boil orange for 2 hours. WHen boiled take out and cut into quarters, placing in blender and blend until a pulp is formed.
    Whisk up eggs until frothy, add in caster sugar and whisk again. Sift in cocoa powder + Baking powder, add in remaining ingrediients and whisk until combined.
    Pour in to a greased 7inch cake tin (i did this and then made the 3 extra cupcakes but you may want to play around with scales and a bigger cake tin!)
    Bake for 30 mins at 170 fan (or until a knife comes out clean.
    Allow to cool for 5 minutes then turn out on to a wire cooling rack.

    I hope your oranges are organic if you are using the peel. Or at least check on pesticides used and see if they can be effectively washed off. Check ALWAYS your dirty dozen list.

    To open a coconut you just need to use the back of the knife and bang the middle section right around and it will just open :)

    I just wanted to share my experience with the chocolate orange almond cake - as I've made loads. If you soak your almonds the night before, they're much easier to turn into flour - you just blitz them with fresh water the next day (this is how almond milk is made too - so you get a litre of free almond milk for your troubles too - yay) - then you dry out the almond meal in the oven on a really low heat, using your favourite spatula to turn it once or twice :-) With the oranges, you just put 2 seedless oranges in a large pot with lots of boiling water and leave it simmering with a lid on - the lid stops the water evaporating so quickly and you only need to top it up once. You can also just blitz all the ingredients for the cake at once. I don't worry about the egg cooking - as the rest of the ingredients, plus a little cold almond milk stops that from being a problem. And for ANY icing with orange - I've learned to never add the orange juice until the very end. Cooking the juice makes it taste acidic/acrid - but the best zero waste chocolate orange icing that goes with this cake - is just; dark chocolate chips melted with some icing sugar and a tablespoon or two of almond milk, and then, onc it's cooled a little, the juice of a seedless orange (and the peel has a million uses - one of my favourites is to dry the skins out in the oven on a low heat - and blitz them up to add to body scrubs, or home made candles). :-) P.S. I like to add a few chocolate chips and chopped nuts to the cake batter before it goes in the oven - to add texture and a little extra sweetness.

    Brilliant effort but....... Importing oranges and especially avocados is very damaging to the environment.
    Maybe try a video using locally produced food with no waste but I bet thatโ€™s impossible in the world we now live in.
    Great stuff tho fair play.

    Why torture the orange for two hours? I've tried recipes with whole oranges before, Mary Berry's for example, and 30 minutes is enough

    Grace, you can make icing sugar by just blitzing your caster sugar. Stick caster sugar into your blender and it makes perfect icing sugar. Hope that helps for the next time you need it. Lee :)
